Cream Cheese Pancakes

Today I’m sharing my newest discovery!

Cream cheese pancakes have been a godsent since my daughter has simultaneously gone on a food strike and become obsessed with pancakes as of late. It’s an added bonus that I own a Mini Maker so I can easily make toddler size pancakes and waffles for her!

What I love about this healthy alternative is that it is super easy to make, low sugar, and high protein.  They taste just like regular pancakes so we enjoy them with a little syrup or fresh fruits like strawberries or blueberries. I’m hoping to experiment more because they also seem to have the potential to make excellent crepes!

Ingredients

  • 2 oz Cream Cheese
  • 2 Eggs
  • 1 TSP Granulated Sugar
  • 1/2 TSP Cinnamon
  • Pam Spray

Instructions

  1. Mix up all the ingredients thoroughly until batter is smooth.
  2. Let mixture settle for 2 minutes
  3. Pour batter on hot, greased pan
  4. Cook for 2 minutes or until golden, flip, then cook 1 minute on other side
  5. Enjoy!
