What I love about this recipe is that there is a good mix between sweet and spicey. The chicken won’t dry out while cooking thanks to the jelly and it carries a distinct flavor. It tastes delicious with rice but I’m eager to try other combinations.
I can’t say it enough that this is probably the easiest chicken recipe I’ve done and my family loved it. For me, it was literally only 2 ingredients and took less than 10 minutes to prepare.
I am terrible at cooking so this makes me very happy!
*I cheated slightly because I picked up this jelly at my local farmer’s market. I am obsessed with it! The ingredients listed are pure came sugar, pineapple, distilled vinegar, lemon juice, and habanero. When I have more time, I’m definitely going to try to make my own jelly.
