Tropical Spice Chicken

I’ve been busy in the kitchen this weekend testing out more new recipes and I’m proud to say that I discovered a whole new recipe for crockpot chicken!

What I love about this recipe is that there is a good mix between sweet and spicey. The chicken won’t dry out while cooking thanks to the jelly and it carries a distinct flavor. It tastes delicious with rice but I’m eager to try other combinations.

I can’t say it enough that this is probably the easiest chicken recipe I’ve done and my family loved it. For me, it was literally only 2 ingredients and took less than 10 minutes to prepare.

I am terrible at cooking so this makes me very happy!

  • 12 oz Pineapple Habanero Jelly*
  • 2 (6oz) Chicken breasts

*I cheated slightly because I picked up this jelly at my local farmer’s market. I am obsessed with it! The ingredients listed are pure came sugar, pineapple, distilled vinegar, lemon juice, and habanero. When I have more time, I’m definitely going to try to make my own jelly.

  1. Rinse and pat fry the frozen chicken
  2. Lay flat in the crock pot
  3. Lather generously with jelly using the entire 12 oz being sure to get some under the chicken as well
  4. Add enough water to cover the bottom of the crockpot
  5. Cook on low for 3 hours
  6. Enjoy!
